Spaghetti with Caviar and Seared Scallops

INGREDIENTS

1 serving

Italian pasta, spaghetti
Three seared scallops
Red flying fish caviar
Royal Siberian Caviar
Spinach (optional, can be sautéed or served fresh)
Olive oil
Garlic, chopped (optional)
Salt and pepper to taste
Lemon for serving

METHOD

1. Cook the pasta. Boil the pasta in salted water until done, then drain and toss with olive oil, adding salt and pepper to taste.

2. Sear the scallops. Heat a pan with olive oil. If desired, add chopped garlic and sauté until golden. Add the scallops and sear them on each side until golden brown, about two to three minutes per side. Season with salt and pepper to taste.

3. Assemble the dish. Place the spaghetti on a plate, top with the three seared scallops. Add red flying fish caviar to the side and place black caviar on top.

4. Serve. Arrange spinach next to the pasta, which can be sautéed or served fresh. Serve with lemon wedges.
