| New potatoes | 200g |
| Mayonnaise | 2 tbsp |
| Horseradish | 1 tsp |
| Small shallot minced | 1 |
| Worcestershire sauce | 1 tsp |
| Sriracha sauce | 1 tsp |
| Paprika | ½ tsp |
| Lemon juice | 1 tsp |
| Ripe avocado | 1 |
| Baby gem lettuce picked and washed | 1 |
| Breakfast radishes sliced | 4 |
| Red onion finely diced | ½ |
| White crab meat | 150g |
| Royal Siberian Caviar | 30g |

METHOD
1. Simmer the new potatoes in salted water for 20 minutes or until the potatoes are tender to the touch. Drain and leave to cool.
2. Mix together all the dressing ingredients in a small bowl.
3. Cut the avocado in half and remove the stone, scoop out the flesh using a spoon and cut into 1cm cubes.
4. Thickly slice the new potatoes.
5. Arrange the salad between 4 glasses and top with Russian dressing and caviar (you can use any type of caviar: Oscietra, Siberian or even Beluga Caviar).
